Elisabeth Stuart-Fox has worked as Dietitian-Nutritionist at the Aboriginal and Islander Community Health Service in Brisbane for over ten years, dedicated to the improvement of the health of Aboriginal and Islander people.
The goal of The Bunya Cookbook is to promote the health of all through hearty, healthy and affordable recipes. It also aims to promote the integration of traditional Aboriginal and Islander foods into Australian food culture.
The Bunya Cookbook has three sections. The first offers a four-week lunch and dinner menu with recipes suitable for all health-conscious Australians, including diabetics, people wanting to lose weight, and people with cardiovascular diseases. The second section offers recipes for healthy sweets and desserts. The third combines flavours from all over the world with Indigenous foods such as kangaroo, emu, crocodile, game birds, witjuti grubs and traditional plant foods to create a uniquely Australian cuisine.
